Vancouver to Alaska Cruise on Norweigan Sun Review

I started writing this on the last day of the cruise and now I have been back for months so the post will change from in the cruise to after. In summary it was great and all four of us ranging in ages from 9 to late 40’s we all want to go back. I bought a 24 hour internet package fot $35 so I can upload all my pictures and hopefully get this post done. I’m currently writing this while getting my hair done at the spa.  The cruise has been great but very busy. I’m having trouble staying awake. It’s now over a week later and I’m home. I had a plane fiasco where we sat on the runway for a few hours and then returned to the gate. I inevitably got sick after that and still am but I really want to get these Alaska cruise blog...

Vegan mac and cheese using leftover cheese

I had a lot of vegan cheese in my fridge so I thought it would be a good time to try and vegan macaroni and cheese it turned out delicious. 

All you need is some vegan butter, vegan cheese, and plant milk. I thought the barista blend would make it creamier but it didn’t do any plant milk will work. 

The presidents choice vegan butter i found at no frills is one of the best vegan butters I have tried highly recommend. Melt a little butter in the pan add cheeses and keep stirring. The cheese co cheese and Violife Parmesan block melted really well. The Violife shredded was harder to melt and the slices did not melt at all. Keep stirring and add some vegan cream cheese and plant milk as necessary to get a smooth sauce. 

Add some spices for flavour I added curry powder, salt, and pepper. Add macaroni and stir. I added fried onions and basil for more flavour. 

Then I added some of the Violife Tex mex and baked it in the air fryer oven. This cheese actually melted well the other Violife varieties I have tried do not melt like this here is a link to a picture on Instagram  of the Melted cheese. Enjoy

It has been over six months since I had Uterine Fibroid Embolization (UFE). I have some previous blogs about getting diagnosed and the day of the procedure. 2025 Contest wins updated Dec 2025

Last year I started keeping track of the prizes I won. You can read that post here  2024 Contest Prize Wins . It is a great post to have for memories so I’m going to start a new post for 2025. Updated December 2025 I’m a little behind on this post. It’s now December. I won four prizes in October and nothing in November. I’m still waiting for one prize to come and hopefully December will be a good month and can beat last years prize vale of $1600. The last prize in October was a $50 Booster Juice gift  card from @jess.can.eat It needed to be picked up in Orleans and I have a friend that lives there. I gave the prize to my friend and she told me she had forgotten how good Booster juice was and enjoyed it.  Total value of prize $50 Total value of prizes 2025 $1369 The third prize was tickets to the Ottawa women’s show. Post Menopausal Bleeding MRI and results

 If you haven’t read my previous posts read part 1   Post Menopausal bleeding and Ultrasounds . It was getting long so I decided to start a new post. I got the call for an MRI at the end of March. It was scheduled for a couple days later at 2 am at Montford hospital. I only know about this hospital because I work for National Defence and we have offices there. I knew it at as the military hospital but it’s actually a separate building. It was still cold and snowing in Ottawa so I wasn’t looking forward to having to be out at 2am. I was also really busy at work but the only options may have been worse weather.  I really didn’t want to take UBER that late when it’s also freezing outside but there are only a few people I could ask to drive me at 2am on a weeknight. I am really grateful that I have some really great friends in Ottawa and my friend drove me and came inside with me.
