2 ingredient High Protein Vegan Bagels with Gluten Free recipe

I know you are all going to ask for a recipe.  I don’t actually measure ingredients or follow recipes but I will try to give you a recipe at the end of the post.  I started by making a 2 ingredient bagel. This is usually made with self rising flour and yogurt. I don’t have self rising flour so I added a 1/2 each teaspoon of baking powder and baking soda. I also added 2 tbsp of nutritional yeast and a pinch of salt for flavour.  The only vegan yogurt I have tried that I like is the lime flavour high protein silk. I like the texture and the taste of this one. I was a bit worried that the lime flavour wouldn’t taste good in this bagel but I like the way it turned out. You can use any yogurt you want but try and use a thicker one. I used a third of a cup just add some and mix with a spoon until all the flour is incorporated.  I shaped it by hand let it rest for 5 minutes. I love VeganHackspod’s Mung bean vegan egg recipe. Here is a previous blog comparing it to Justegg-vs-mung-bean-egg-using-vegan.html I wondered if  different lentil would work I didn’t cook lentils much myself before I was vegan but my mom always did. I only had Urad Dal or split black mapte beans a couple of times. My mom would save it for special occasions telling me it took longer to cook. I remember it being so creamy as a soup. It was only $3.99 for the bag about the same price as mung beans. Looking at the instructions they don’t take longer to cook and I looked up some recipes online they are used in pancakes.  I soaked them after four hours they are so fluffy and expanded so much. The washing was a little more work for these than the mung lentils because it’s hard to tell if it’s skin or dirt on them maybe that’s what my mom meant by longer cooking.  The next day I blended the lentils with some spices and plant milk. JustEgg vs Mung bean Scramble using Vegan Hacks Pod recipe

Just Egg is a great vegan egg substitute but it is getting very expensive and it is also a plastic bottle with ingredients that I am not familiar with. This little bottle was on sale for $7 at the grocery store.  I have seen a few different recipes of recreations of Just Egg using mung beans but they all had ingredients i didn’t want to buy. Veganhackspod had a very simple recipe on his Instagram essentially just mung beans and black salt. I had a hard time sourcing these two ingredients in my area mung beans are usually easily accessible but they have been sold out at all the stores. After months of looking I finally found a bag at the grocery store for $3. This bag will last a long time.  I love black salt it is great for bloating and I personally like the taste. A lot of vegans will use it to make things taste like eggs.   The first time I tried Justegg I wondered what all the hype was about. Later I found out it if it is close to the expiry date it doesn’t work the same as a fresh batch. Justegg is a vegan egg substitute that is mostly made from mung beans and the most popular vegan egg substitute in North America. It is pretty easy to make a homemade version if you don’t want to use a commercial product. I moved and have been having trouble sourcing ingredients but I will make it in the future. Justegg is available at a few stores in my area I have tried Justegg a few more times and it was much better. It is easier to get fresher bottles where I live now. The instructions say to scramble it just like you are making scrambled eggs.
