Vegan macaroni and cheese

  I was expecting to have a meal kit delivery from vegano foods but there was a delivery problem. This leaves me with no groceries or meal plan for the week. I decided it is time to use some of the ingredients I have in my apartment.  I had a box of daiya alfredo I used the sauce a long time ago and never used the brown rice pasta. I have a few types of vegan cheese so perfect to try vegan Mac and cheese.  This is the first time I have tried Sproud plant milk it’s pea based and thick so I thought it would be good for the sauce. Step one was adding melt vegan butter to the pan. Then around one cup of milk. Then spices I used curry powder, black pepper, cayenne pepper. I added a tablespoon of vegan sour cream to help thicken the sauce. After incorporating added half a cup each of vegan Parmesan, vegan cheddar, vegan mozzarella.  It melted well but it was salty. Airfryer Pasta chips TikTok trend

I have been seeing the pasta chip trend all over Instagram. You cook the pasta normally then season and airfry it for ten minutes and you end up with crunchy chips. I have wanted to try but it as been too hot to cook anything until today.  This morning before I went out I boiled the pasta. I had bought these bigger shell pasta awhile ago to make a stuffed shell recipe. It was cheaper to buy 2 bags I didn’t know what I was going to do with the extra pasta until now.  I cut the pasta into thirds and decided to add most of the spices I have. Bagel seasoning, curry powder, nutritional yeast, cayenne, salt and pepper. I didn’t look up the recipe and also added some olive oil. The seasoning was good I ate some of the pasta from that plate.  I set the air fryer to 360 for ten minutes. Vegetable Soup or Vegan Cheese Sauce?

  I find it amazing that I can throw some vegetables in the soup maker press a button and after 25 minutes it transforms into something super delicious.  This morning I defrosted some pizza sauce and then did not feel like making pizza. I thought I would try a vegan pizza soup.  I had a giant sweet potato so I cut some into fry shapes and added the not good looking pieces into the soup maker. Then I added some vegan better than bullion chicken flavour. Half an onion, water, cashews, nutritional yeast, pizza sauce, curry powder, Mexican seasoning and water. I usually add some fat to the soup maker I forgot this time it turned out great.  While the Soup maker was working I tossed the fries in cornstarch and sprayed with avocado oil. Then air fried them for 12 minutes. Adding a little oil part way through cooking.  The soup tastes amazing and was a perfect dip for my fries.

My experience having a Uterine Fibroid Embolization

It has been a month since I had Uterine Fibroid Embolization (UFE). Today is the first day since I have been able to walk to the mall. Prior to the procedure this was a normal everyday walk for me it takes around 20 minutes. I’m currently sitting outside the mall drinking Starbucks preparing for the walk home. This has been a two year journey so far I am not sure why I have been procrastinating on writing this. I think it’s very important to that woman talk about their experiences. I did not know what fibroids were until I was diagnosed with them.   I went to my doctor one day because it had been a few months since I had a period. Previous to that I was getting them every 2-4 weeks. There was no chance that I was pregnant and I had started a job where I was the only female in the office. In the past my cycle was influenced by other woman. I was not around any so I originally thought it was normal then I wondered if I was going into early menopause. I was in my forties and started my period when I was 10.  My doctor assured me that because I have hypothyroidism and low iron irregular cycles are normal. I have a good doctor so she decided to take a look at my pelvis she noticed it was swollen. Then she told me to go get an ultrasound. It is easy to get an ultrasound appointment here. I have ne

2020 review and goals for 2021

It is already February 2021 and I have not written a yearly post or made any goals for 2021. Maybe you are reading this in the future it has almost been a year the world has been in a pandemic.  In my area most businesses that serve food or retail and schools are open. Other things like religious services, group events, and movie theaters are closed. We should only socialize with our household or if we live alone one or two other people. Other places have more severe lock downs.  My personal situation is my mom and I only socialize indoors with each other. On occasion I will meet a coworker for an outdoor walk and a takeout coffee. We are allowed to eat inside restaurants but I don't feel comfortable. I do pick up take out or visit a coffee shop and get a coffee to go. I am also still working from home but most of my office is back in the office with safety plans in place.  It has almost been a year since I have been inside the office. Vegan airfryer donuts

Vegan Air Fried Donuts I have been experimenting trying to get the best tasting vegan donuts cooked in the Airfryer. I don’t deep fry. and there a no good donut stores close to where I live so attempted to make some.  There are lots of donut recipes on the internet I am not good at following recipes and don’t want to bother with things like rolling out dough. I also wanted to get more of a donut shop texture versus baked. The yeast and baking powder works really well.  This recipe is good I am the only one that has tried them though.  I do not usually measure ingredients which is why I don’t bake but I tried so you can make them and give me some feedback.
