2024 Contest Wins

I enter and win a lot of contests but I always forget to track how much I win. This year I am going to have a blog post and keep updating it as I win.  Contest win #3 was a medium mixed produce box from OddbunchCanada. Until this contest i didn’t know much about OddbunchCanada . I can’t believe they are selling a produce box of this size and quality for only $32 plus $4 delivery. It is a lot more produce than I was expecting to get and it’s very good quality. Last week during a trip to Montreal I May have complained that I needed to eat some vegetables after all the croissants and sweets that problem is solved. I will likely order a small box $20 from OddbunchCanada in the future.  Total Value of Prizes so far March 2024 $131 Contest win #2 for 2024 was a Queen Cake from  Strawberry Blonde Bakery . A very yummy vegan cake. I packed some up to share with my friends. I’m not sure what this cake is valued at but cakes range from $44-100 on the website. I will go with a conservative $50. 

Vegan airfryer donuts

Vegan Air Fried Donuts I have been experimenting trying to get the best tasting vegan donuts cooked in the Airfryer. I don’t deep fry. and there a no good donut stores close to where I live so attempted to make some.  There are lots of donut recipes on the internet I am not good at following recipes and don’t want to bother with things like rolling out dough. I also wanted to get more of a donut shop texture versus baked. The yeast and baking powder works really well.  This recipe is good I am the only one that has tried them though.  I do not usually measure ingredients which is why I don’t bake but I tried so you can make them and give me some feedback. Comment below or on Instagram @livingvancouverloca.  Vegan Airfryer Donuts  Ingredients  2 Tbsp vegan butter melted  1 Tbsp yeast 1 Tbsp sugar  1/4 cup water  1 Tsp baking powder  2-3 cups flour (depends on weather) Pinch salt  Few drops of vanilla (or flavouring of choice)  Approximately 1/2 cup plant milk of choice  Melt vegan butte

Vegan gluten-free sweet potato cake bites

This an adaptation of the sweet potato brownie recipe I tried a few years ago. Read that post here  https://www.livingvancouverloca.com/2017/10/october-30-2017-healthy-flourless-vegan.html . New twist these are cooked in the Instant Vortex Plus airfryer oven and the method is a little different. These turned out so good add a bit of alcohol and these could definitely be a dessert option in a fancy restaurant.  Yesterday I cooked the sweet potato  in the Instantpot on manual pressure for 10 minutes. Let it sit for an hour and then put them in the fridge over night.  I was making these for breakfast I wanted pancakes and also wanted to see what brownies would taste like. I forgot the maple syrup by accident it wasn’t needed. Pressure cooking the potatoes brings out the sweetness. The only baking tray that fits in my airfryer oven is the mini cupcake one which is perfect.  For the method I dumped the ingredients in the bowl without measuring.
