Vegan macaroni and cheese

Image
I was expecting to have a meal kit delivery from vegano foods but there was a delivery problem. This leaves me with no groceries or meal plan for the week. I decided it is time to use some of the ingredients I have in my apartment.  I had a box of daiya alfredo I used the sauce a long time ago and never used the brown rice pasta. I have a few types of vegan cheese so perfect to try vegan Mac and cheese.  This is the first time I have tried Sproud plant milk it’s pea based and thick so I thought it would be good for the sauce. Step one was adding melt vegan butter to the pan. Then around one cup of milk. Then spices I used curry powder, black pepper, cayenne pepper. I added a tablespoon of vegan sour cream to help thicken the sauce. After incorporating added half a cup each of vegan Parmesan, vegan cheddar, vegan mozzarella.  It melted well but it was salty. I added more milk, spices, and some water to fix the taste.  I had coated some of the pasta in olive oil, curry powder, nutritio

Vegan airfryer donuts

Image
Vegan Air Fried Donuts I have been experimenting trying to get the best tasting vegan donuts cooked in the Airfryer. I don’t deep fry. and there a no good donut stores close to where I live so attempted to make some.  There are lots of donut recipes on the internet I am not good at following recipes and don’t want to bother with things like rolling out dough. I also wanted to get more of a donut shop texture versus baked. The yeast and baking powder works really well.  This recipe is good I am the only one that has tried them though.  I do not usually measure ingredients which is why I don’t bake but I tried so you can make them and give me some feedback. Comment below or on Instagram @livingvancouverloca.  Vegan Airfryer Donuts  Ingredients  2 Tbsp vegan butter melted  1 Tbsp yeast 1 Tbsp sugar  1/4 cup water  1 Tsp baking powder  2-3 cups flour (depends on weather) Pinch salt  Few drops of vanilla (or flavouring of choice)  Approximately 1/2 cup plant milk of choice  Melt vegan butte

Vegan gluten-free sweet potato cake bites

This an adaptation of the sweet potato brownie recipe I tried a few years ago. Read that post here  https://www.livingvancouverloca.com/2017/10/october-30-2017-healthy-flourless-vegan.html . New twist these are cooked in the Instant Vortex Plus airfryer oven and the method is a little different. These turned out so good add a bit of alcohol and these could definitely be a dessert option in a fancy restaurant.  Yesterday I cooked the sweet potato  in the Instantpot on manual pressure for 10 minutes. Let it sit for an hour and then put them in the fridge over night.  I was making these for breakfast I wanted pancakes and also wanted to see what brownies would taste like. I forgot the maple syrup by accident it wasn’t needed. Pressure cooking the potatoes brings out the sweetness. The only baking tray that fits in my airfryer oven is the mini cupcake one which is perfect.  For the method I dumped the ingredients in the bowl without measuring. I have approximated the measurements below.  I

5000 hits on Mturk and online earnings update October 2020

I finally hit 5000 hits on mturk. This is a milestone for many mturkers because it has potential to open up more hits. I only do things I enjoy on mturk so it took me years but I am happy I finally did it. Although I don´t spend a lot of time on mturk you can see that over the last few years I have earned over $1200 US dollars which has given me some nice entertainment money. I work on many different platforms in my sparetime I think my goal for this year was $1500. This is doing things I enjoy in my spare time. Many of these platforms are based on ad revenue and the pandemic made that decrease. Things are coming back now but 2020 has been a special year even in the online earnings world. I don´t know if I will make the goal this year but I will definately be able to get to $1000 this year. I have cashed out $750 this year and hopefully the rest of the year will be better. The platforms that are good constantly change and part of the work is finding platforms that have good work

Vegan Mayonnaise airfryer bread

I was curious if vegan mayo is good for baking so time for some experiments. I am not a baker and do not measure ingredients I like to experiment. This turned out amazing I have already made it twice slightly different method. Method one came out pastry like and method 2 was more like deep dish pizza crust. Both were excellent.  I don’t measure ingredients but I’ll try to give you a recipe.  Method 1: ingredients vegan mayo, flour, olive oil Add 1 tablespoon of yeast and vegan mayo to 1/2 cup tap water in a bowl mix with spoon. Add 2 cups of flour and mix with hands keep adding flour until consistency looks like this Cover with plastic wrap and let sit at room temperature. I put mine inside the Instant pot. After a few hours it will look like this. This is a fun dough to play with it doesn’t fall apart easily. Add a little olive oil before shaping the dough.  I tried cooking some but it was better after being in the fridge overnight.  After letting it sit in the fridge overnight I stuf
