2 ingredient High Protein Vegan Bagels with Gluten Free recipe

I know you are all going to ask for a recipe.  I don’t actually measure ingredients or follow recipes but I will try to give you a recipe at the end of the post.  I started by making a 2 ingredient bagel. This is usually made with self rising flour and yogurt. I don’t have self rising flour so I added a 1/2 each teaspoon of baking powder and baking soda. I also added 2 tbsp of nutritional yeast and a pinch of salt for flavour.  The only vegan yogurt I have tried that I like is the lime flavour high protein silk. I like the texture and the taste of this one. I was a bit worried that the lime flavour wouldn’t taste good in this bagel but I like the way it turned out. You can use any yogurt you want but try and use a thicker one. I used a third of a cup just add some and mix with a spoon until all the flour is incorporated.  I shaped it by hand let it rest for 5 minutes. I flew Canada’s worst airline and had a great experience

Flair started direct flights to Vegas from Ottawa. I have heard so many bad things about the airline but my first experience was fantastic.   I would usually take checked luggage but I was worried that luggage would get lost. I have a Solgaard check in suitcase and couldn’t imagine traveling with anything else anymore so I splurged on a carry on closet. I hope to do a lot more traveling in the future and now I have luggage for it. Flair does charge for carry on but the flights are still much cheaper than other airlines. My interest is in the direct flight but I have no issues paying for some extras. I buy seat selection because I want a window seat to take videos. I have short legs so leg room is not an issue for me. There was a lot of room under the seat for bags and feet. I saw complaints about not having reclining seats but I never recline my seat and I don’t like it when the person in front of me reclines. Visiting Las Vegas staying at South Point alone for the first time

My mom and I used to go to Las Vegas a few times a year before the pandemic. Our last trip was in October of 2019 all of our trips were good but the trips in 2019 were standout trips. If you have not read my previous blogs my mom passed away five months ago. This trip was a solo trip for me as my personal tribute to my mom and celebrated her birthday the way we would have if she was still here. I found out grief travel is a thing on this trip and I suppose that is what I was doing.  The last year has been really stressful I dealt with my mom’s pancreatic cancer, sold both of our primary residences, moved across the country, started two new jobs, my mom passing and getting covid at her funeral. Did I mention menopause? It was definitely time for a vacation and the realization that I haven’t gone on vacation since 2019.   A lot of people questioned me on my decision to go to Vegas alone.
