Mung Bean ‘Eggs’ or Vegan Cheese Sauce

This is part 2 of the previous blog post you can see here  JustEgg-vs-mung-bean-egg-using-vegan.html When I wrote the last  post I didn’t have black salt. I received my order from Amazon a few days ago. Black salt makes things taste like eggs and it also great for bloating, and I personally like the taste.  This time I put the soaked mung beans, seasonings a little oil and some water in the magic bullet. I think I put too much water. Last time I whipped the mixture with a fork before cooking it in the pan. This time I poured from the blender into the pan.  While it was cooking I thought this method would make a good vegan cheeze sauce. Just change the seasonings and thin it out with plant milk add vegan cheese. I only had baby bell cheese and coconut almond milk which wasn’t the best for a cheese sauce so i didn’t add much just enough to see if it would work. I will likely try to make a mung bean cheeze sauce in the future.  I had already added seasoning to make the mixture taste like

Pizza Kit

 Costco sells pizza kits which are pizza crusts and tomato sauce. They have a few different brands I can’t remember the name of the brand I bought it was an Italian name. 

The package came with a bag to freeze the crusts and sauce that I will use later. It is very convenient as the sauce is individual packs as well. 

The crust was the perfect size for my air fryer oven. I used ingredients I had in my house. I spread the sauce then added vegan cheese, frozen grilled vegetables, pineapple, grape tomatoes and topped with vegan Parmesan. 

The pizza cooked in the air fryer oven for around ten minutes I turned the tray a couple of times and broiled for a minute. Then I added the little bit of fresh basil I had in my house. 

I think it turned out great. The vegan cheese melted really nicely. It tasted better than a frozen pizza maybe not pizzeria quality. Great quality for a pizza made at home in ten minutes.

My experience having a Uterine Fibroid Embolization

It has been a month since I had Uterine Fibroid Embolization (UFE). Today is the first day since I have been able to walk to the mall. Prior to the procedure this was a normal everyday walk for me it takes around 20 minutes. I’m currently sitting outside the mall drinking Starbucks preparing for the walk home. Fibroids, Ultrasound, MRI and UFE during a pandemic

This has been a two year journey so far I am not sure why I have been procrastinating on writing this. I think it’s very important to that woman talk about their experiences. I did not know what fibroids were until I was diagnosed with them.   I went to my doctor one day because it had been a few months since I had a period. Previous to that I was getting them every 2-4 weeks. There was no chance that I was pregnant and I had started a job where I was the only female in the office. In the past my cycle was influenced by other woman. I was not around any so I originally thought it was normal then I wondered if I was going into early menopause. I was in my forties and started my period when I was 10.  My doctor assured me that because I have hypothyroidism and low iron irregular cycles are normal.
