Vegan Grilled Cheese and Dill Pickle Soup

I have a lot of pickles in my fridge and someone on Instagram had mentioned dill pickle soup. I thought it sounded interesting but I didn’t look up a recipe.
I was using things I had in my house as I haven’t gone grocery shopping for awhile. I added vegan butter, half an onion, 1 potato, a few pickles, and lots of spices to the soup maker. I used curry powder, dried parsley, smoked paprika, mushroom seasoning, salt and pepper. I turned the soup maker on and went to do a workout. The soup maker is still my favourite gadget.
I am always amazed by how good things turn out in the soup maker. I will make this soup again but I will use more vegetables next time to get a creamier texture.
I found this really good applewood vegan cheddar block from the UK at Save-On-Foods on sale for $8.99. I thought it was expensive when I bought but the block lasted a long time and it melts great the best melting vegan cheese I have tried so far. I made a grilled cheese with presidents choice vegan butter, sunflower bread from Save-On-Foods and the applewood cheese. Then my hand hit the side of the hot pan and I dropped the sandwich in the soup so you that’s how the sandwich garnished the soup. Enjoy if you make this.
