Started 2025 with a trip to Las Vegas

It’s now December 31, 2025 Im drinking tea in an ice cream shop in Ottawa realizing I never finished this post. I drafted this post earlier in the year but it’s all still relevant.  The  way the world has changed in the last few months I feel like I need to explain that I went to Las Vegas in early 2025 because I knew things were going to change after January 20. I didn’t know how. I was expecting more violence and less direct flights. I never expected that things would change so quickly in a few months. It is now the beginning of March and it’s hard to keep up. Anyways flights and tourism to US destinations are already significantly reduced from Canada. I finished this trip knowing it would be awhile before I visited the US again and it was a pretty perfect trip for my memories and I am glad I took it.  I have been to Las Vegas many times you can read about some of my previous trips on this blog. October 23, 2017 Facebook recipe #2 dole whip soft serve clone using only 3 ingredients

I am still trying out recipes I have previously shared on Facebook this one is so simply and yummy. The original recipe link can be found here https://www.realsimple.com/food-recipes/browse-all-recipes/pineapple-soft-serve.

I substituted mango for pineapple because I like mango better plus its what I had in the freezer.
All that is needed is some frozen mango or pineapple, a frozen banana, and coconut milk. These are all things I always have around and its a great dessert that is a little healthier.



 I blended in the magic bullet and I did have to switch blades as I originally used the whipping blade which couldn't break up the frozen mango. Just a couple of switches of the blades and it turned out great and I put some in the freezer for later.





This is really delicious, healthy, and easy I will make it again.

I won over $1300 worth of contest prizes in 2025

Last year I started keeping track of the prizes I won. You can read that post here  2024 Contest Prize Wins . It is a great post to have for memories so now I have a yearly post.  Updated January 1, 2026  I only had one more win since the last update it was a $10 scratch ticket from waypoint. I have won other smaller prizes like chocolate or drinks from waypoint that I usually giveaway. This is the first time I actually went to a waypoint to get my prize. It’s a gas station convenience store very small but cute. The ticket didn’t win anything. It’s now 2026 so this will be the last update for this post. November and December were really slow for prize wins for me. November makes sense because I took a break from entering but I’m not sure what happened in December. I entered a lot sometimes that’s just the luck but hopefully I will start the year with a few wins. I do have a few small prize wins that haven’t come yet. I made a vegan Dubai chocolate bar

I wanted to try a proper vegan version of the viral  Dubai chocolate. I have tried the one from Palm bites  and  it’s good but it’s a healthier version made from dark chocolate and the pistachio is the crunch. I have also tried the cookie from Naturally Vero since they had an option to get it with my meal prep delivery. They do make a chocolate bar  but they don’t deliver it. I like the cookie filling but find it was too heavy in the cookie. Juice Dudez also has the filling in a mango pudding which is excellent but they don’t do a vegan chocolate yet. I am hoping I will convince them or any other Ottawa vendor to make one some day. In the meantime I had to make one myself.  I have asked my vendor friends to make me one even sent them the recipes but no one has yet. I really wanted to try a proper unhealthy version just once.
