Started 2025 with a trip to Las Vegas

It’s now December 31, 2025 Im drinking tea in an ice cream shop in Ottawa realizing I never finished this post. I drafted this post earlier in the year but it’s all still relevant.  The  way the world has changed in the last few months I feel like I need to explain that I went to Las Vegas in early 2025 because I knew things were going to change after January 20. I didn’t know how. I was expecting more violence and less direct flights. I never expected that things would change so quickly in a few months. It is now the beginning of March and it’s hard to keep up. Anyways flights and tourism to US destinations are already significantly reduced from Canada. Vegan Mayonnaise airfryer bread

I was curious if vegan mayo is good for baking so time for some experiments. I am not a baker and do not measure ingredients I like to experiment. This turned out amazing I have already made it twice slightly different method. Method one came out pastry like and method 2 was more like deep dish pizza crust. Both were excellent.  I don’t measure ingredients but I’ll try to give you a recipe.  Method 1: ingredients vegan mayo, flour, olive oil Add 1 tablespoon of yeast and vegan mayo to 1/2 cup tap water in a bowl mix with spoon. Add 2 cups of flour and mix with hands keep adding flour until consistency looks like this Cover with plastic wrap and let sit at room temperature. I put mine inside the Instant pot. After a few hours it will look like this. This is a fun dough to play with it doesn’t fall apart easily. Day Trip to Harrison Hot Springs

I have rarely left the city where I lived for the last 7 months as we are in a pandemic. This is a day trip to Harrison Hot Springs which is a little less than a 2 hour drive from where I live.  Video on YouTube  Thankfully I live in an area that has low virus cases and local travel is allowed. My mom and I both have not left our houses for more than a few hours a day and were concerned that we would run into issues of needing a bathroom. When I was younger we would often spend a few days in Harrison so we know the area. The resort is very nice but we currently wanted a place to go for a few hours. It’s almost the end of summer and although I live in a beautiful city it’s nice to go to somewhere less city like.  We decided to leave at 1100 so that we would have a few hours of daylight. Experimenting with 2 ingredient bagel air fryer recipes

I have used my instant vortex plus airfryer oven almost daily since I bought it in October. I am in airfryer oven Facebook group and people keep posting the 2 ingredient bagel recipe. The original recipe is self rising flour and Greek yogurt. The time I decided I wanted to try this was a couple months ago when the pandemic was starting and I couldn’t find any flour. I finally found organic all purpose wheat and pastry flour. I couldn’t find baking powder or self-rising flour and I had Dahi which is an Indian style yogurt not Greek. I also have organic baking soda and I like to experiment. I set the oven to airfry which is 400 degrees and the timer for 10 minutes. While it was preheating I poured some flour into a bowl and added the yogurt mixed together and shaped some of the dough into a bagel. The big bagel in the picture is just the two ingredients. How I celebrated my birthday in 2020 while most of the world is in quarantine

The area where I live is one of the lucky ones so far our health system has kept up with the number of cases but we are mostly self-isolating to prevent the spread of COVID19. I’m still allowed to go outside, grocery store, get take out. I work from home now but in the evenings so other people can work during the day. Now on to my birthday. There is noisy construction near my apartment so that woke me up around 8:30.  I often go to Vegas to celebrate my birthday and always stay at my favourite hotel there which is South Point.  I put the slippers on while I checked my messages and social media. I have been trying to do a workout in the morning. I really need this for stretch and not to sit all day. I have beachbody on demand which I have used for years. 2020 the year the world the changed and my personal journey ie journal

I am not sure if I will publish this but it is time to write this is just a personal story on my personal blog. A couple weeks ago life changed around the world with COVID-19. Prior to this I was going to start blogging again about my journey with Fibroids including my first Ultrasound and MRI but I have a procrastination problem. I already had so much stuff going on in my life this year that I had stopped watching the news. I was getting through by looking forward to my 6 month old nephew visiting here for the first time and maybe a future trip to Vegas. I also really like my job, have the best boss, and most of my social connection happens there with people that have very different backgrounds than me. Over the last month I knew that things were going to change as our government was advising us without making us panic. 2019 Internet Earnings $1500 Goal Not Met

A real quick update while I analyze why I did not meet the goal this year. I earned $1220 which was $280 short of my goal. There are a few reasons I did not meet this goal the work in mturk was harder to get, I needed a new computer so went months without working, and I did not spend the time consistently through the year to meet this goal. Vegan Veggie Burger Soup Recipe

This soup is so good I am returning to blogging just so I don't forget the recipe. I watch a You tuber named Wicked Penny and she is making soup every Saturday on her channel. She made a cheeseburger soup so if you would like to see the inspiration for this soup go watch wicked penny on YouTube here is the link  https://www.youtube.com/watch?v=kD5euE9Pgas . I used most of the vegetables pictured below because they were on sale. I recommend using an onion and green pepper for flavour. As the soup is vegan I like to use a potato and sweet potato to give it a creamy texture. The carrots were on sale so I added them use any veggies you like. veggies make the soup base I didn't have any soup stock but spicy ketchup, seasoned diced tomato and whatever spices you have will give the soup a nice flavour.
