I tried all the vegan soft serve in Ottawa

I tried all the vegan soft serve in Ottawa. I probably missed a few but I did try a lot of them. I have lived in Ottawa for two years and I was still transitioning from vegetarian to vegan when I moved here. I don’t remember having a lot of soft serve in Vancouver when I did eat dairy. I only remember having it at McDonald’s and buffets. I didn’t even know vegan soft serve was a thing until I moved to Ottawa. I tried six places The Merry Dairy, Oddburger, Little Jo Berry’s, Chocolate Favouris, IKEA, PastelXCoco, and 2 bonuses dole whip from Cinnaholic and the plant based dilly bar from Dairy Queen. I also went to Mavericks but they have been having supply issues and the soft serve is currently not vegan. Let me know if I missed any and maybe I’ll update the post in the future.  The Merry Dairy was the first vegan soft serve I had in Ottawa. I remember thinking I had to wait in line to get into the store only to learn soft serve was at the truck with no line. I was super excited that I

Vegan Noodle Soup

If you don't have a soup maker I really love mine. I bought it years ago it is a kettle with a blender in it where you just put the ingredients in press the timer and in 25-28 minutes you have soup. This recipe can be made in a pot but I made it in the soup maker.

 Ingredients

Vegan Broth
1 Sweet Potato cut into pieces
half a white onion sliced
3 small carrots  (I was practicing with my spiralizer)
1 package smoked tofu
curry spice
pepper
rice noodles
additional water
1 tsp olive oil

I had never used the carrot spiralizing tool before and I forgot I had carrots. I tried to use it on a sweet potato it didn't work so that is why this soup has carrots and sweet potato in it.

I found the soup maker works best if you use a little bit of fat in it which is why I added olive oil. Add the oil, onion, sweet potato, spices, broth and fill to the line with water.

Plug the soup maker in and select chunky for the type of soup. The alarm will sound in 28 minutes so you can go do something else. I used to come home from work put the soup on do a 25 minute workout and when the workout was done I would eat soup for dinner. I am trying to get into that routine but that is another blog post.

I like smoked tofu crispy so I pan fried some of the pieces.

When the soup maker timer goes off add the rice noodles, non fried tofu, and carrots to the soup maker.

There is no short timer on the soup maker so put the lid back on set the soup maker to chunky. Set a manual timer for 3 minutes and unplug the soup maker after the 3 minutes is up.

I took the picture after I poured most of the broth into the bowl. After my bowl of soup I had noodles for the rest of the week.

Pour soup into a bowl and top with pan fried tofu. Enjoy.
