A road trip Ottawa to Quebec City Day 1

 My friend visited from Vancouver at the same time a friend from Ottawa was going to Montreal to celebrate her birthday and foodie buddy was also going to be in Ottawa. I will call the first friend to arrive Van-friend she is Korean and really wanted to go to Quebec City because there is a Korean drama filmed at the fairmont there. I learned French in Trois-Rivières thirty years ago and I always said I would go back one day. This trip took a lot of planning but of course things never go as planned it was still a great trip just wished we had more time in each city. When we were looking to rent a car we were having trouble getting one and no trains were running to Quebec City on a Thursday. We decided to book a flight from Ottawa to Quebec City meet my friend in Montreal the next day stay the night and drive back to Ottawa in the afternoon.  Van friend flight came late on Wednesday night. Vegetable Soup or Vegan Cheese Sauce?

I find it amazing that I can throw some vegetables in the soup maker press a button and after 25 minutes it transforms into something super delicious. 

This morning I defrosted some pizza sauce and then did not feel like making pizza. I thought I would try a vegan pizza soup. 


I had a giant sweet potato so I cut some into fry shapes and added the not good looking pieces into the soup maker. Then I added some vegan better than bullion chicken flavour. Half an onion, water, cashews, nutritional yeast, pizza sauce, curry powder, Mexican seasoning and water. I usually add some fat to the soup maker I forgot this time it turned out great. 

While the Soup maker was working I tossed the fries in cornstarch and sprayed with avocado oil. Then air fried them for 12 minutes. Adding a little oil part way through cooking. 

The soup tastes amazing and was a perfect dip for my fries.

It has been over six months since I had Uterine Fibroid Embolization (UFE). I have some previous blogs about getting diagnosed and the day of the procedure. It is about seven months after the procedure now.  Where I live you stay overnight in the hospital for pain management they give you a self controlled morphine pump. There are other places where you will go home 4 hours after the procedure. I knew I wasn't going to be allowed to get up for hours nor did I feel like it I didn't realize that I wouldn't be allowed to get up all night because of the urinary catheter. I went into menopause in my forties after having uterine fibroid embolization for fibroids. I was loving menopause not worrying about bleeding was so great. All the symptoms I had except for a few were easier than dealing with fibroid periods. I went to Jamaica with my friend in April and she got hers on the trip and I was like I don’t miss those days. I enter and win a lot of contests but I always forget to keep track of what I win. This year I will keep updating this post as my prizes come in.  Update September 2024 - Contest win # 8 I won a $100 giftcard for St Laurent Mall from unstoppable mama on Instagram. I go to this mall a lot because it’s one of the easiest ones for me to get to in Ottawa. It’s a decent sized mall not too big and it doesn’t have a grocery store but has everything else that I would expect to be in a mall. I went after work to pick up the gift card from the administrative office it took me awhile to find it. As many times as I have been in the mall I never went to that area there is even a GoodLife Fitness there I had no idea. After being in a grey cubicle farm all day the mall office looked so nice I almost wanted to apply for a job there.
