2 ingredient High Protein Vegan Bagels with Gluten Free recipe

Image
I know you are all going to ask for a recipe.  I don’t actually measure ingredients or follow recipes but I will try to give you a recipe at the end of the post.  I started by making a 2 ingredient bagel. This is usually made with self rising flour and yogurt. I don’t have self rising flour so I added a 1/2 each teaspoon of baking powder and baking soda. I also added 2 tbsp of nutritional yeast and a pinch of salt for flavour.  The only vegan yogurt I have tried that I like is the lime flavour high protein silk. I like the texture and the taste of this one. I was a bit worried that the lime flavour wouldn’t taste good in this bagel but I like the way it turned out. You can use any yogurt you want but try and use a thicker one. I used a third of a cup just add some and mix with a spoon until all the flour is incorporated.  I shaped it by hand let it rest for 5 minutes. I preheated the airfryer oven and air fried for 20 minutes.  This was perfect: chewy on the out...

Better Forking vegan Mac and cheese review

Image
I found better forking Vegan Mac and cheese at Home Sense. It was $4.99 The ingredients are simple slightly different than other Mac and Cheese as it has potato and coconut flour in it. The instructions say to cook the pasta for 7-8 minutes but I found mine took 10 to cook.  I don’t always follow instructions when I cook but I am trying to have the same comparisons for all my mac and cheese reviews. Usually the instructions will say to make the sauce by adding vegan butter, plant milk, and cheese packet then add the pasta. The steps were slightly different on the box drain the pasta and quickly put it back in the pan. Add the butter stir. Add the powder stir. Add the plant milk stir. Then let sit for a couple minutes. I tried the pasta with seasoning before I added the milk and I really liked it. It tasted like nacho cheese powder. When I added the milk the taste changed it may be because I only had almond milk it’s not bad though. I added some parmela creamy vegan cheese and reall...

Update 2024: A beautiful spring weekend in Ottawa

Image
It’s now May 2024 one year after I wrote this post thought it would be fun to compare to last year. A lot of things I did in the last week were similar to last year. I wasn’t feeling great on the weekend so there was more staying home. Today the holiday Monday was busy I babysat my brothers kids, then took the LRT to the mall and byward market it is one of the few things open on a holiday here. I’m ending the night sitting on my building’s rooftop and I can see fireworks from different directions but not high enough for me to get a good picture of. The sky is beautiful though. The rest of the post I will write below each section from last year. This is my first spring in Ottawa and it’s so beautiful especially after the long winter. It’s only Saturday afternoon but I have already done so much this weekend I had to blog about it.  t actually started on my lunch break on Friday. I like to say my office is in the middle of nowhere and it really is. It is a twenty minute walk to Tim Ho...
