A road trip Ottawa to Quebec City Day 1

 My friend visited from Vancouver at the same time a friend from Ottawa was going to Montreal to celebrate her birthday and foodie buddy was also going to be in Ottawa. I will call the first friend to arrive Van-friend she is Korean and really wanted to go to Quebec City because there is a Korean drama filmed at the fairmont there. I learned French in Trois-Rivières thirty years ago and I always said I would go back one day. This trip took a lot of planning but of course things never go as planned it was still a great trip just wished we had more time in each city. When we were looking to rent a car we were having trouble getting one and no trains were running to Quebec City on a Thursday. We decided to book a flight from Ottawa to Quebec City meet my friend in Montreal the next day stay the night and drive back to Ottawa in the afternoon.  Van friend flight came late on Wednesday night. Vegan mac and cheese using leftover cheese

I had a lot of vegan cheese in my fridge so I thought it would be a good time to try and vegan macaroni and cheese it turned out delicious. 

All you need is some vegan butter, vegan cheese, and plant milk. I thought the barista blend would make it creamier but it didn’t do any plant milk will work. 

The presidents choice vegan butter i found at no frills is one of the best vegan butters I have tried highly recommend. Melt a little butter in the pan add cheeses and keep stirring. The cheese co cheese and Violife Parmesan block melted really well. The Violife shredded was harder to melt and the slices did not melt at all. Keep stirring and add some vegan cream cheese and plant milk as necessary to get a smooth sauce. 

Add some spices for flavour I added curry powder, salt, and pepper. Add macaroni and stir. I added fried onions and basil for more flavour. 

Then I added some of the Violife Tex mex and baked it in the air fryer oven. This cheese actually melted well the other Violife varieties I have tried do not melt like this here is a link to a picture on Instagram  of the Melted cheese. Enjoy

It has been over six months since I had Uterine Fibroid Embolization (UFE). I have some previous blogs about getting diagnosed and the day of the procedure. It is about seven months after the procedure now.  Where I live you stay overnight in the hospital for pain management they give you a self controlled morphine pump. There are other places where you will go home 4 hours after the procedure. I knew I wasn't going to be allowed to get up for hours nor did I feel like it I didn't realize that I wouldn't be allowed to get up all night because of the urinary catheter. I went into menopause in my forties after having uterine fibroid embolization for fibroids. I was loving menopause not worrying about bleeding was so great. All the symptoms I had except for a few were easier than dealing with fibroid periods. I went to Jamaica with my friend in April and she got hers on the trip and I was like I don’t miss those days. This year I will keep updating this post as my prizes come in.  Update September 2024 - Contest win # 8 I won a $100 giftcard for St Laurent Mall from unstoppable mama on Instagram. I go to this mall a lot because it’s one of the easiest ones for me to get to in Ottawa. It’s a decent sized mall not too big and it doesn’t have a grocery store but has everything else that I would expect to be in a mall. I went after work to pick up the gift card from the administrative office it took me awhile to find it. As many times as I have been in the mall I never went to that area there is even a GoodLife Fitness there I had no idea. After being in a grey cubicle farm all day the mall office looked so nice I almost wanted to apply for a job there.
