Started 2025 with a trip to Las Vegas

It’s now December 31, 2025 Im drinking tea in an ice cream shop in Ottawa realizing I never finished this post. I drafted this post earlier in the year but it’s all still relevant.  The  way the world has changed in the last few months I feel like I need to explain that I went to Las Vegas in early 2025 because I knew things were going to change after January 20. I didn’t know how. I was expecting more violence and less direct flights. I never expected that things would change so quickly in a few months. It is now the beginning of March and it’s hard to keep up. Anyways flights and tourism to US destinations are already significantly reduced from Canada. I finished this trip knowing it would be awhile before I visited the US again and it was a pretty perfect trip for my memories and I am glad I took it.  I have been to Las Vegas many times you can read about some of my previous trips on this blog. I made a vegan Dubai chocolate bar

I wanted to try a proper vegan version of the viral  Dubai chocolate. I have tried the one from Palm bites  and  it’s good but it’s a healthier version made from dark chocolate and the pistachio is the crunch. I have also tried the cookie from Naturally Vero since they had an option to get it with my meal prep delivery. They do make a chocolate bar  but they don’t deliver it. I like the cookie filling but find it was too heavy in the cookie. Juice Dudez also has the filling in a mango pudding which is excellent but they don’t do a vegan chocolate yet. I am hoping I will convince them or any other Ottawa vendor to make one some day. In the meantime I had to make one myself.  I have asked my vendor friends to make me one even sent them the recipes but no one has yet. I really wanted to try a proper unhealthy version just once. I made Vegan Hackspod mung bean vegan egg recipe with Urad dal or Split black Mapte Beans

I love VeganHackspod’s Mung bean vegan egg recipe. Here is a previous blog comparing it to Justegg-vs-mung-bean-egg-using-vegan.html I wondered if  different lentil would work I didn’t cook lentils much myself before I was vegan but my mom always did. I only had Urad Dal or split black mapte beans a couple of times. My mom would save it for special occasions telling me it took longer to cook. I remember it being so creamy as a soup. It was only $3.99 for the bag about the same price as mung beans. Looking at the instructions they don’t take longer to cook and I looked up some recipes online they are used in pancakes.  I soaked them after four hours they are so fluffy and expanded so much. The washing was a little more work for these than the mung lentils because it’s hard to tell if it’s skin or dirt on them maybe that’s what my mom meant by longer cooking.  The next day I blended the lentils with some spices and plant milk. I tried to make Ashley’s 2 ingredient instantpot cheesecake vegan

On my heartbeets.com there is a 2 ingredient instantpot cheesecake recipe which uses sweetened condensed milk and yogurt. The website states that she does not have a good vegan alternative. I have tried to veganize this recipe before. I used biscoff cookies, oat yogurt, and sweetened condensed milk. I thought it was good but I don't like oat yogurt and the recipe could be improved. This time I have better ingredients. Activia now makes a plant based yogurt which is delicious. I also have accidently vegan cookies. They have a really fluffy nice filling. I thought I would use the cookies as the crust and mix the filling with the yogurt and condensed milk. I don't have a cheesecake pan so i just used a cake pan that fits in the instantpot. I greased the pan with vegan butter and grinded the cookies in the magic bullet. I was having a hard time mixing the cookie filling into the yogurt mixture so I also mixed it in the magic bullet. Cheesy vegan baked pasta

I cook everything in the instant vortex plus air fryer oven. I just got a new loaf pan that fits perfectly inside. Vegan feta was on sale so I decided I should make the TikTok viral pasta. I have made it once before with tofu and used a cake pan. The past one was good but I only made it once.  I recently became vegan so I remember what dairy cheese tastes like. This is the first time I have tried vegan feta it tastes more like cream cheese to me but it’s good. Cherry tomatoes were too expensive so I got fresh San Marzano tomatoes they will be a good substitute.  I put tomatoes, olive oil, half a block of feta, and some za’star spice. I got the spice as a free sample and I don’t have other dried herbs so also a good substitute. I cooked this in the air fryer oven at 350 for fifteen minutes.  The feta was all nicely melted but I probably should have cooked the tomatoes for another ten minutes.
