On my heartbeets.com there is a 2 ingredient instantpot cheesecake recipe which
uses sweetened condensed milk and yogurt. The website states that she does not
have a good vegan alternative. I have tried to veganize this recipe before. I
used biscoff cookies, oat yogurt, and sweetened condensed milk. I thought it was
good but I don't like oat yogurt and the recipe could be improved.
This time I have better ingredients. Activia now makes a plant based yogurt which is delicious. I also have accidently vegan cookies. They have a really fluffy nice filling. I thought I would use the cookies as the crust and mix the filling with the yogurt and condensed milk.
I don't have a cheesecake pan so i just used a cake pan that fits in the instantpot. I greased the pan with vegan butter and grinded the cookies in the magic bullet.
I was having a hard time mixing the cookie filling into the yogurt mixture so I also mixed it in the magic bullet. Then I poured the mixture into the cookie crust. I recently bought a lot of chocolate chips because they were on sale so I decided to top the mixture with chocolate chips.
Finally I covered the cake with tinfoil added 2 cups of water to the instapot. I placed the cake on the trivet in the pot. I can never get the trivet to stand properly but it is fine on angle. I Set the pot on manual for 30 minutes. Then let it natural realease for another twenty minutes.
Right after I took the cake out of the Instantpot I mixed the chocolate chips in with a fork. I was hopeful the cake would firm up when it cooled. I tried it hot it was very soft but it was tasty.
It ended up being a really tasty chocolate pudding not a cheesecake. In the picture below you might be able to tell that I have eaten some and reshaped it. The last time I made this I put cookies in the filling they are definately needed to hold the cake up. This dessert is not lost though put it in a fancy cup add some fresh fruit and you will have a nice dessert.
