Started 2025 with a trip to Las Vegas

It’s now December 31, 2025 Im drinking tea in an ice cream shop in Ottawa realizing I never finished this post. I drafted this post earlier in the year but it’s all still relevant.  The  way the world has changed in the last few months I feel like I need to explain that I went to Las Vegas in early 2025 because I knew things were going to change after January 20. I didn’t know how. I was expecting more violence and less direct flights. I never expected that things would change so quickly in a few months. It is now the beginning of March and it’s hard to keep up. Anyways flights and tourism to US destinations are already significantly reduced from Canada. The best vegan gluten free chocolate chip cookie recipe


I have mentioned a few times on social media that a cookie made with a banana, almond flour and a few optionals like chocolate chips, vanilla, maple syrup, and baking powder makes the best bakery good cookies. I know everyone wants a recipe but I’m not a recipe person I really just throw ingredients I have in my house together and see what happens. What I can give you is a blog post with instructions and pictures. Recipe attempt is at the end. 

The cookies in the pictures above look different. This is because I change the optional ingredients all the time. If you want crunchier cookies omit the baking powder. If you want a different flavour go wild. The only thing that is really required in this recipe is a banana you can even change the flour if you wanted to. I find almond flour the easiest to work with and I always have a Costco size bag of it at home. I have not tried other flours but I think chickpea, gluten free, and all-purpose would all work with this recipe as long as you change the liquid ratio. Add some plant milk if you need more liquid. I have added plant milk to this recipe and you will get more of a cake.

I have been having a hard time finding good bananas in stores lately. I had to use one that isn’t that ripe and it didn’t have much sweetness. This recipe is better with a ripe banana. 

Put the banana in a bowl and mash it with a fork. Then add some vanilla and maple syrup and mash again. Recipe and measurements are at the end but I really just add whatever I feel like. 

Add the almond flour and mix it with the fork again, then add chocolate chips. Now you can mix with the fork or your hands. Shape into balls and flatten into cookie shapes. I just use my hands yes I wash them first. This dough is really easy to work



I usually make smaller cookies they take around 12 minutes in my airfryer oven. I usually preheat at 350 and turn the heat down to 325 part way through baking. These were bigger cookies than i usually make I didn’t turn the heat down and they took 15 minutes. Let cool and enjoy but let’s be real these are not cool before I eat them. 

I am enjoying making vegan ice cream in my ninja swirl and I added some ice cream to a warm cookie. I will have to do a future post about the ice cream. 

The recipe attempt for those that want one is below. I don’t use a recipe and recommend making adjustments that suit your tastes. 

Recipe 

1 banana 

1 cup almond flour 

Optional

1tsp baking powder 

1 tbsp maple syrup 

1/2 cup chocolate chips 

Preheat oven to 350 I use an airfryer oven and reduce heat to 325 while baking around halfway. 

In a bowl mash banana with a fork add vanilla and mole syrup and mash again with fork. Add almond flour mix everything together with the same fork. Add chocolate chips now you can mix with the fork or use your hands. The dough is very easy to shape with your hands. Shape into cookies. Bake for 12-15 minutes depending on the size of your cookie. 

Let cookie cool if you want and enjoy.
